Chia, Parmesan and Almond Crusted Barra
Delicious barramundi fillets coated in a tasty mixture of chia seeds, parmesan cheese and almond meal. The chia seeds are high in fibre and almonds are packed with nutrients so this is a healthy meal, especially if you fry it in olive oil.

Ingredients
- 2 x 200 gram barramundi fillets
- 50 grams almond meal (finely ground almonds)
- 25 grams finely grated parmesan or romano cheese
- 2 tablespoons of mixed white and dark chia seeds

Method
- Mix almond meal, parmesan and chia seeds together on a large plate
- Place Barramundi fillets (pat them dry first) in the mixture and press down to coat the surface
- Then turn over and repeat
- Press any other remaining crumbs over the surface until it is coated
- Preheat fry pan with olive oil
- Fry fish on first side, ensuring surface is coated with oil, for around 6 minutes
- Turn over and repeat
- If it is a thicker piece of fish, repeat this until cooked
