Caesar Dressing

A timeless classic dressing, we have all had it on our Caesar's Salad when dining out but probably never made it.

Ingredients

  • 1 small garlic clove, peeled
  • 2 egg yolks
  • 2 anchovies (optional)
  • 100 ml sherry vinegar
  • 40 gm parmesan cheese, freshly grated
  • 200 ml olive oil
  • 100 ml vegetable stock
  • salt and freshly ground pepper
  • a drop of worcestershire sauce

Method

  • Place garlic, egg yolks, anchovies, sherry vinegar and parmesan in a blender and blend till smooth and creamy
  • trickle in the oil and thin down to taste with the stock
  • season to taste with salt, pepper and worcestershire sauce
  • this amount serves about 8 people
