Caesar Dressing
A timeless classic dressing, we have all had it on our Caesar's Salad when dining out but probably never made it.
Ingredients
- 1 small garlic clove, peeled
- 2 egg yolks
- 2 anchovies (optional)
- 100 ml sherry vinegar
- 40 gm parmesan cheese, freshly grated
- 200 ml olive oil
- 100 ml vegetable stock
- salt and freshly ground pepper
- a drop of worcestershire sauce
Method
- Place garlic, egg yolks, anchovies, sherry vinegar and parmesan in a blender and blend till smooth and creamy
- trickle in the oil and thin down to taste with the stock
- season to taste with salt, pepper and worcestershire sauce
- this amount serves about 8 people
