Cabbages are another of those vegetables that you either love or hate, I love them, particularly brussel sprouts, we always called them baby cabbages when we were kids. They are one of the oldest known vegetables, believed to go back over 4000 years. They were used on ships to stave off scurvy, also treat constipation, they improve digestion and in earlier centuries were used to heal wounds. Captain Cooks doctor wrapped the large leaves around the wounds of his men who were injured after a severe storm. Cabbages are an excellent source of Vitamins C,B1,B2,B3, are low calorie, and contain glutamine- which is an acid anti inflammatory property. Fresh cabbage juice has been used to treat peptic ulcers. They are a high wind vegetable so dont eat too much at a time or you wont have too many friends!!. There are many uses for cabbages, soups and stews, the main ingredient in coleslaw, bubble and squeak is traditionally potatoes and cabbage, sauerkraut is pickled cabbage, highly favoured by Germans. There are a number of varieties of cabbage, drumhead, savoy, wombok, purple, kale, brussel sprouts, broccolini is also in this family.
