Bran and Marmalade Muffins

A good way of getting the kids to enhance their fibre intake with these delicious muffins, you can subsitute any of your favourite jams in place of the marmalade

Ingredients

  • 1 cup All-Bran
  • 3/4 cup milk
  • 1 egg
  • 2 ozs soft butter
  • 1 cup S.R flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 cup brown sugar
  • marmalade or jam

Method

  • Soak All Bran in milk till absorbed ( can do the night before )
  • Add egg, butter then other ingredients, mix well
  • Place spoonfuls into greased muffin tins till half full
  • Put teaspoon of marmalade or jam into centre of each
  • Top up with more of the muffin mixture
  • Bake in hot oven 20 25 minutes
  • Serve warm or cold

Makes a delicious snack or lunchbox treat, can make a couple of batches and freeze, great for when guests pop in unexpectedly
