Berry and Pineapple Pancakes
Yet another delicious recipe from the sandwich press, this pancake is kinda like an omelette and the sauce is kinda like toffee, but its much more healthy!
Ingredients
- 2 x eggs
- 1 cup plain flour
- 1/2 cup self raising flour
- 1/2 cup milk
- 2 teaspoons of honey
- 1/2 cup of berries
- 1/2 cup of pineapple chopped
- 1/2 cup of coconut
- Optional: Cashews, macadamia nuts, apple, sultanas, dates, cinnamon
Method
- Make your pancake mixture by mixing eggs, flour, milk and butter in a large bowl.
- Heat up the sandwich press and spoon enough mixture to make a large pancake
- Cook until the pancake is mostly covered with popped bubbles
- Put fruit over half of the pancake and sprinkle on some honey or golden syrup and coconut
- Fold the pancake in half as pictured below
- Press down the lid of the sandwich maker to seal the pancake together and cook the inside
- Spoon any liquid which leaks out the sides back over the top of the pancake and press the lid down. This creates a toffee like sauce from the sugars in the fruit and honey
- Use egg flips to move it to a plate and enjoy!
Serve
- With a sprinkling of icing sugar on top
- Cut in half to share with your partner
- Topped with more fresh fruit
