Beetroot Dip

You have probably seen lots of new dips in the deli at your local supermarket but they are so easy and economical to make at home.You probably have most of these ingredients in your pantry

Ingredients

  • 450gm can beetroot or baby beets
  • 1 cup parmesan grated
  • 150gm salted roasted cashews
  • 1 tablespoon lemon juice
  • 1 clove garlic crushed
  • salt and pepper

Method

  • Drain beetroot over bowl to save juice, reserve one tablespoon
  • Using food processor, roughly chop cashews
  • Add beetroot and parmesan
  • Process till finely chopped, place in a large bowl
  • Stir in lemon juice, garlic and reserved juice, season to taste.
  • cover with plastic wrap and refrigerate
  • Serve with Sour Cream Crackers  ( see recipe in Baking)
