Basic Filling

This recipe is a delicious base for a filling to use in chocolate moulds. You can add any colour or flavour to make this filling suit your favourites or a theme. When the chocolates are served cold the filling is firm, but if served at room temperature it is soft and fluffy.

Ingredients

  • 150 grams of icing sugar
  • 25 grams of butter
  • 100 grams of white chocolate
  • 5 drops of flavouring oil
  • 1/8 teaspoon of oil based colourings

Method

  • Melt white chocolate (no more than 45 degrees)
  • Soften (not melt) butter, then whip for a few minutes with a whisk (until it turns white)
  • Add icing sugar, flavouring oil and colouring to butter and mix well
  • Add to white chocolate and mix well
  • Place in fridge until set
  • Portion small amounts into chocolate moulds
