Basic Filling
This recipe is a delicious base for a filling to use in chocolate moulds. You can add any colour or flavour to make this filling suit your favourites or a theme. When the chocolates are served cold the filling is firm, but if served at room temperature it is soft and fluffy.
Ingredients
- 150 grams of icing sugar
- 25 grams of butter
- 100 grams of white chocolate
- 5 drops of flavouring oil
- 1/8 teaspoon of oil based colourings
Method
- Melt white chocolate (no more than 45 degrees)
- Soften (not melt) butter, then whip for a few minutes with a whisk (until it turns white)
- Add icing sugar, flavouring oil and colouring to butter and mix well
- Add to white chocolate and mix well
- Place in fridge until set
- Portion small amounts into chocolate moulds
