Basic Cheese Sauce

This is a basic cheese sauce recipe which can be varied by adding a few herbs or different varieties of cheese. Adding a wedge of blue cheese can be an interesting variation to this sauce as can camembert or parmesan.

Ingredients

  • 2 x large eschallots, chopped
  • 2 x tablespoons of butter
  • 1/2 cup of flour
  • 1 cup grated cheese (tasty or cheddar are fine, but experiment with your favourite varieties)
  • 1/2 cup of milk

Method

  • Melt butter in a saucepan with eschallots
  • Add milk and cheese, simmer and stir
  • When cheese is melted and mixture is smooth and creamy, add flour slowly and stir thoroughly to remove all lumps
  • Add more milk and whisk if mixture is too hard to pour.

Serve

  • Use over vegetables to get kids to eat them. Great on broccoli or cauliflower.
  • Use in lasagne
  • Pour over fish
  • Mix in some roast garlic and use on roast vegetables or meat alongside gravy
  • Add a little to potato or sweet potato mash for extra creaminess
  • With baked ham or silverside
