Basic Cheese Sauce
This is a basic cheese sauce recipe which can be varied by adding a few herbs or different varieties of cheese. Adding a wedge of blue cheese can be an interesting variation to this sauce as can camembert or parmesan.
Ingredients
- 2 x large eschallots, chopped
- 2 x tablespoons of butter
- 1/2 cup of flour
- 1 cup grated cheese (tasty or cheddar are fine, but experiment with your favourite varieties)
- 1/2 cup of milk
Method
- Melt butter in a saucepan with eschallots
- Add milk and cheese, simmer and stir
- When cheese is melted and mixture is smooth and creamy, add flour slowly and stir thoroughly to remove all lumps
- Add more milk and whisk if mixture is too hard to pour.
Serve
- Use over vegetables to get kids to eat them. Great on broccoli or cauliflower.
- Use in lasagne
- Pour over fish
- Mix in some roast garlic and use on roast vegetables or meat alongside gravy
- Add a little to potato or sweet potato mash for extra creaminess
- With baked ham or silverside
