Banana Cake

Trying to convert recipes to a low cholesterol alternative proves challenging but I have just made this Banana Cake and it is beautiful and moist.

Ingredients

  • 125gm butter ( or half butter and half margarine)
  • 155gms sugar
  • 2 teaspoons grated orange rind (optional)
  • 2 eggs lightly beaten
  • 1 1/2 cups SR flour (or half SR and half Wholemeal SR)
  • 1/2 cup plain flour ( or wholemeal plain flour)
  • 1/2 teaspoon bi carb soda
  • 1/2 cup chopped walnuts
  • 1 cup mashed ripe banana ( aboue 3 bananas)
  • 1/4 cup orange juice, I used apricot nectar as I had leftovers from another cake
  • 1/2 cup sultanas

 

Banana Cake

Method

  • Crream butter and sugar till light and fluffy, add rind if using
  • add eggs one at a time and beat well
  • stir in flours, soda, fruit, nuts and juice, then bananas
  • mix well
  • pour into well greased 20cm round pan
  • bake in moderate oven approx 45 minutes or till skewer comes out clean
  • leave in tin 10 minutes to cool slightly
  • serve cold with a little butter or margarine

I think this cake would be lovely served warm with custard
