Banana Cake
Trying to convert recipes to a low cholesterol alternative proves challenging but I have just made this Banana Cake and it is beautiful and moist.
Ingredients
- 125gm butter ( or half butter and half margarine)
- 155gms sugar
- 2 teaspoons grated orange rind (optional)
- 2 eggs lightly beaten
- 1 1/2 cups SR flour (or half SR and half Wholemeal SR)
- 1/2 cup plain flour ( or wholemeal plain flour)
- 1/2 teaspoon bi carb soda
- 1/2 cup chopped walnuts
- 1 cup mashed ripe banana ( aboue 3 bananas)
- 1/4 cup orange juice, I used apricot nectar as I had leftovers from another cake
- 1/2 cup sultanas

Method
- Crream butter and sugar till light and fluffy, add rind if using
- add eggs one at a time and beat well
- stir in flours, soda, fruit, nuts and juice, then bananas
- mix well
- pour into well greased 20cm round pan
- bake in moderate oven approx 45 minutes or till skewer comes out clean
- leave in tin 10 minutes to cool slightly
- serve cold with a little butter or margarine
I think this cake would be lovely served warm with custard
