Banana and Carrot Cake

When Bananas are cheap there is nothing better than a lovely moist Banana Cake.  Here is one that also combines the goodness of carrots also.

Ingredients

  • 90gm butter
  • 1 cup brown sugar
  • 1 large egg
  • 1 cup mashed ripe banana
  • 1 cup grated carrot
  • 1 1/2 cups plain flour
  • 1 level teaspoon bi carb soda
  • 1 teaspoon each cinnamon and nutmeg
  • 1/2 cup chopped walnuts

Method

  • Cream butter and sugar till soft and well blended, add egg and beat well
  • Stir in carrot and banana then flours and spices
  • Pour into a greased and lined loaf tin
  • Bake in moderate oven for 1 hour or till skewer comes out clean.
  • This cake also freezes well
