Baked Oregano Fish
This was probably the worst variation of this I have cooked. It tasted ok, but the presentation didn't do the meal justice and I overcooked the toppings a little. And what was I thinking combining Oregano and Lime Zest?! It wasn't the best variation - basil alone would have been fine.
The fish wasn't the greatest either... it is pretty hard to top Barramundi in this dish. I recommend selecting the best piece of fish, and only adding 1 or 2 complimentary ingredients to it.
INGREDIENTS
- Fresh Oregano
- Fillet/s of fish
- 2 cloves of Garlic
- Basil
- Olive Oil
- Lime Zest & juice
- Foil & Baking Dish
METHOD
- 1. Lay fish fillets in foil, shiny side in
- 2. Zest lime with fine grater & squeeze some over fish
- 3. Press garlic and drop over top of fillets
- 4. Wrap sides of foil over the dish so it cooks in its own steam
- 5. Bake for 25 to 50 minutes depending in the size of the fish fillet
- 6. Use the liquid to make a great sauce by mixing it with a whole egg mayonnaise
- 7. Serve on a bed of noodles or mashed potato or with baked potatoes
