Apple and Berry Tarts

These sweet treats use a gluten free frozen sweet pastry and contain a delicious mix of berries and coconut, topped with a caramel cream cheese and stripes of chocolate.

Ingredients

  • 2 sheets of gluten free bakery sweet pastry sheets
  • 1 large apple, diced
  • 1/2 cup frozen or fresh berries
  • 1 cup of coconut
  • 1 tablespoon of golden syrup
  • 1 tablespoon of butter
  • 2 tablespoons of sugar

Method

  • Cut pastry sheets into squares to fit your tart pan, pressing them into the shape gently but firmly so there is no air under the pastry.
  • Bake in a medium (180C) oven for about 10 to 15 minutes or until they start to brown
  • Set aside to cool slightly
  • Melt butter, golden syrup and sugar in a saucepan and heat until it starts to brown, stirring constantly
  • Add berries and apple and simmer until apple softens
  • Remove from heat and add coconut, set mixture aside to cool
  • Put apple mixture into tart shells
  • Add cream cheese topping as per below

Caramel Cream Cheese

  • Heat 1 tablespoon of butter and 1 tablespoon of golden syrup in a saucepan, add 1/2 cup of sugar and heat until dissolved and turning a golden brown colour
  • Cool slightly then add cream cheese, whisking until smooth and creamy
  • Pipe onto cakes using a piping bag and star attachment
  • Melt some dark chocolate and use a small piping bag to paint stripes across the top of the finished tarts

Banana Caramel Variation

  • A banana caramel version can be made easily by substituting the berries and apple for 2 medium bananas.
  • Add some extra butter and sugar for more caramel, allow it to brown and then add the banana at the very end so it doesn't turn to mush. 
  • If you don't like the taste of golden syrup you can leave it out, use honey, or even a liqueur!
