Amys Sultan Orange Tart
This recipe was passed down by a great family friend who was still baking well into her late 80's. She was always invited to our family gatherings and always brought a special treat.
Ingredients
Custard Filling
- 1 pastry shell ( see pie crusts in dessert section)
- 1 1/2 cups milk
- 1 tablespoon custard powder
- 1 dessertspoon cornflour
- 2 ozs butter
- 3 ozs sugar
Method
- add custard powder, cornflour and sugar to milk
- place in saucepan and bring to the boil
- simmer 3 minutes, add butter, mix, then pour into pie shell
Topping
- 1 1/2 cups orange juice and a little lemon juice
- 2 cups water
- 1 cup sugar
- 1 tablespoon cornflour
- 1 tablespoon custard powder
- 2 ozs butter
Method
- put custard powder, cornflour, sugar, water and juices into saucepan
- bring to boil then simmer 3 minutes
- add butter
- COOL
- pour over custard filling
- chill and serve
